Bachelor Thesis [25.07.25]
We’re happy to share that this week Johanna Grun successfully defended her Bachelor thesis:"Herausforderungen, Chancen und Strategien für die Integration regional erzeugter Hülsenfrüchte in die Speisepläne von Hochschulmensen der Region Stuttgart."
The research question was co-developed with the Food Policy Council Stuttgart (Ernährungsrat StadtRegion Stuttgart e.V.) and is linked to their project Stuttgarter Bohnentag.
Johanna chose this topic to contribute to transformation close to home and aimed to generate applicable knowledge. We’re grateful for the support from ReBioBW, ERS, and Studierendenwerk Stuttgart.
For Anna Struth, this was the first time supervising a Bachelor thesis with Verena Seufert as support and examiner– and a moment of pride and great chance to deepen our work in the Foster Food System.
Key findings:There is clear potential for regional legumes: they are healthy, environmentally friendly, and can be locally sourced. However, key challenges remain:
- Creating short supply chains and integrating legumes into procurement processes
- Providing training for staff on how to prepare them
- Raising awareness among consumers about their benefits and taste (and yes, flatulence tends to decrease once the body adapts)
In our department we have the tradition to celebrate with our students after their defense and have the presentation also open to their friends and other members of our group.
Next step: Johanna will likely continue this work during her internship with the Food Policy Council, developing a concrete proposal for how the Stuttgarter Bohnentag could be implemented at the University of Hohenheim.
